Old-Fashioned Blueberry Muffins

Little Z, my 6 year old, loves blueberries!  He enjoys eating them straight from the container. The rest of us, not so much. But we all love blueberry muffins. This was my first attempt at homemade – normally I use the dry mix. I am proud to say these turned out great!  I hope you enjoy these as much as we did! Next time, I will double the batch.

Old-Fashioned Blueberry Muffins

Servings: 6

Ingredients:

1 cup all-purpose flour

1/3 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

1 egg

1/4 cup milk

2 tablespoons butter, melted

1/2 teaspoon vanilla extract

3/4 cup fresh or frozen blueberries (if you like less blueberries use 1/2 cup)

Directions:

In a small bowl, combine flour, sugar, baking powder and salt. In another bowl, whisk the egg, milk, butter and vanilla; stir into dry ingredients just until moistened. Fold in blueberries.

Fill 6 greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Bread Machine Monkey Bread

Another favorite food of mine is bread!  All kinds.  My sweet hubby surprised me with a breadmaker at Christmas.  I sit and wonder sometimes how did I EVER make it through life without it.  Well, maybe not sit and wonder, but it did make the list of my favorite things.  I am sad to say the recipe booklet that came with the machine was disappointing Sad smile.  I was on my own to search for recipes on the world wide web.  I came across a blog with a really cool name, Salad in a Jar.  The woman behind the blog is Paula and she has some fabulous recipes! I found this recipe for Monkey Bread (step by step instructions on this page) and had to try it.  I am so glad I did.  My husband loves it.  Which is fitting since he gave me the bread machine.  I hope you enjoy the bread!
